1.5 lbs chicken breast, diced into bite-sized pieces

1 large bunch broccoli, diced into florets

1 tbsp butter

1 tbsp olive oil

Salt, pepper, and garlic powder to season

2-3 tbsp pesto sauce

Freshly shredded Parmesan cheese

DIRECTIONS

  1. Preheat to 400 degrees. Chop your head of broccoli into florets and set aside. Dice chicken breast into bite-sized peices.

  2. Place the broccoli florets on a large sheet pan, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes, flipping halfway.

  3. Add butter to a large skillet and let melt. Add chicken pieces and sauté until cooked through.

  4. Heat Maruchan Chicken Flavor Rice Bowl according to package directions. Add a crack of black pepper and a sprinkle of garlic powder, if desired.

  5. When the chicken is done, add in about 2 tablespoons of pesto sauce. Mix, taste, and adjust seasoning as desired.

  6. Assemble the bowls! Layer roasted broccoli and chicken on top. Drizzle pesto and sprinkle Parmesan on top to taste. Enjoy!
