For the Marinade:

¼ cup olive oil

2 lemons, juiced

1 tbsp honey

1 clove of garlic, minced

2 tsp dried oregano

1 tsp dried basil

Kosher salt and pepper to taste

For the Bowl:

1 Maruchan Chicken Flavor Rice Bowl

2 chicken breasts

½ cucumber, chopped

2 Roma tomatoes, chopped

Kalamata olives, sliced

Feta cheese, crumbled

Parsley, chopped

DIRECTIONS

  1. Add all marinade ingredients and stir vigorously to emulsify.

  2. Pour ⅓ of the marinade over the chicken and toss to coat. Reserve the remaining marinade to use as dressing, making sure it does not touch the raw meat.

  3. Heat a grill pan or an outside grill to medium-high heat. Add chicken and grill 6-8 minutes per side, or until cooked through.

  4. Heat Maruchan Chicken Flavor Rice Bowl according to package instructions. Transfer to a large heatproof bowl.

  5. Top with grilled chicken and vegetables. Place crumbled feta cheese, cucumber, tomatoes, and kalamata olives over the bowl, and drizzle the remainder of the dressing.
